Not Without Heels: Danish Wedding Cookie Recipe

I'm going to make a bold statement and say that Danish Wedding Cookies (the Keebler ones that come in the Barbie-pink box) might just be my favorite cookies ever. I haven't been able to find them since we moved here though, so last week I decided to try making them.

After some searching online I found a recipe and was pleasantly surprised when they turned out very close to what I wanted. They were so close, in fact, that I knew with a little tweaking I could come up with a recipe that would give me exactly what I was longing for in the pink box. I tried again a couple nights ago and I hate to toot my own horn, but these are awesome!

Yield: 24 cookies

1 cup all-purpose flour
1/4 cup rolled oats, roughly chopped in food processor
1/8 teaspoon ground cinnamon
1/2 cup butter, softened
1/8 teaspoon salt (only add if using unsalted butter)
1/4 cup powdered sugar, plus more for rolling
1/2 teaspoon vanilla extract
1/4 cup mini chocolate chips

1. Preheat oven to 400 degrees.

2. Combine flour, rolled oats, cinnamon, butter, salt, powdered sugar, and vanilla in a large mixing bowl.

3. Beat on medium speed until a stiff dough forms. Add chocolate chips and continue to beat until fully mixed in.

4. Shape dough into balls and place on ungreased cookie sheets, flattening balls slightly.

5. Bake until edges are just starting to brown, about 12 minutes.

6. Remove cookies to wire racks to cool slightly. Once they are cool enough to handle, but still warm, roll cookies in powdered sugar and return to wire racks to fully cool.

7. Cool completely, then roll again in powdered sugar.

I love a good bonfire. So, of course, when I saw that this week's Friday's Fancies theme was a beautiful bonfire outfit I knew I had to play along! Somehow I doubt I'll come across at any bonfires in Brooklyn, but when I go to Florida for the holidays next month I'm sure I'll find myself sitting at one there.

When I went to link my outfit over on Long Distance Loving I noticed that Alison had also used the save puffer vest from J.Crew in her post. I mean seriously, who can resist a hot pink vest!

Not Without Heels: 5 Perfect Scarf + Glove Combos

It has been one crazy week around here! We were incredibly lucky not to lose power during the hurricane, but trying to get anywhere after the storm has turned out to be incredibly tricky at best and more likely impossible. I think most (or at least a good amount) of the subways are supposed to be running today, but gas is still a problem. Hubs waited in line to get gas for over 2 hours last night (which compared to other wait times I've heard is pretty short)!

They just reopened Prospect Park over the weekend so now at least Mason and I can go on our walks in the park again, but there are still so many trees down. On our walk this morning I realized that it is definitely past time for me to pull out all my scarves and gloves (and maybe so shopping for some new ones, too)!
